Vineyards and wine making
Vineyards over 40 years old, characterised by very sandy soils with some gravel. Hand-harvested in plastic crates, with sorting at the winery, followed by cold maceration on its own lees for two months. Vinification takes place with temperature control in 10-hectolitre stainless steel tanks. Alcoholic fermentation with native yeasts.
Tasting notes
This wine appears clean and bright, with a yellow hue showing greenish highlights. On the nose, it is medium in intensity and complex, revealing herbaceous, aniseed, and floral notes. On the palate, it offers a silky texture, well balanced with a pleasant acidity. Its passage is broad, leading to a smooth finish with a subtle hint of bitterness. Overall, it is a harmonious, balanced, and elegant wine.
Food pairing
A perfect pairing with salads, fish, rice dishes, pasta, and white meats. Best served between 4–10°C. Store in optimal conditions at 14–16°C and 70–80% relative humidity.
