The legend tells that one day a brave bull escaped through the streets, causing panic in the population. Saint Juan de Sahagún, upon encountering it, signaled to stop, saying ‘Detente, necio’ (Stop, fool), thus giving rise to the saying and to this wine.

Vineyards and wine making

Vineyards located in the Toro wine-growing area, 65 years old and planted on their own roots. The pebble-rich soils help create a perfect balance between daytime and nighttime temperatures. A 48-hour pre-fermentative maceration is carried out before fermentation at controlled temperatures. Aged for 16 months in fine-grained Spanish and French oak barrels.

Tasting notes

Ruby red colour with cherry highlights. Intense and complex aromas of black fruit, well integrated with spicy notes from the oak, interwoven with toasted and mineral nuances. On the palate, it is broad, powerful, and silky, with well-rounded tannins and subtle sweet tones.

Food pairing

Its harmonious combination of black fruit and spice pairs perfectly with red meats and game dishes. It can also be enjoyed with desserts featuring dark chocolate. It will continue to evolve positively over the next 10 years. Best served at 14–16°C.
