The legend tells that one day a brave bull escaped through the streets, causing panic in the population. Saint Juan de Sahagún, upon encountering it, signaled to stop, saying ‘Detente, necio’ (Stop, fool), thus giving rise to the saying and to this wine.

Vineyards and wine making
Wire-trained 25-year-old vines. Hand-picking harvest in plastic craters follows by sorting the grapes in the winery and pursuing an optimum control process of aroma and polyphenol extraction. Fermentation in controlled temperature for 17 days with 2 daily pump-overs. Aged for 8 months in medium toasted French oak barrels.
Tasting notes
Deep purple-violet color with aromas of red and wild fruits intertwined with sweet and spicy tones, along with toasted notes. On the palate, it is expansive and fresh, displaying a perfect balance between fruit and wood that allows us to savor the varietal intensity of Tinta de Toro with distinct aromas from the French oak barrels. It has a very indulgent and lingering finish.
Food pairing
Its complexity and balance make it the ideal choice to pair with red meats. Furthermore, its harmonious combination also makes it equally delightful with cured meats, pasta dishes, and even white fish. It is recommended to be consumed between 14-16ºC. Shows positive evolution over the next 4 years.
