Vineyards and wine making
Globet vines with age between 50-60 years. Hand-picking harvest in craters, after transport to the winery for sorting the grapes by hand. Pre-fermentation follow by cold maceration for 48 hours in order to proceed with a slow and controlled fermentation below 22°C for 18 days. Aged for approximately 12 months in French oak barrels.
Tasting notes
Red cherry colour with purplish glints, broad and intense bouquet, with roasted and spice notes characteristic of the French oak barrels against a background of ripe fruit and red berries aromas. Rich and silky with a touch of acidity on the palate. Its aftertaste is long and persistent, with an excellent pleasant aroma balance.
Food pairing
An ideal accompaniment to roasted lamb, stews and BBQ. It is also an excellent partner with cure and raw cheeses. Optimum drinking temperature is 14-16 °C. These wines are ready for drinking now but may potentially be cellared for approximately 6 years under optimum conditions (16 °C) at 70-80% relative humidity, at a constant temperature.
